Cherry Almond Oatmeal

  • 1/3 c quick oats
  • 2 tsp oat bran or wheat germ
  • 1 tsp ground flax seed
  • 2 tsp powdered milk
  • 3 tsp brown sugar
  • 1/2 tsp vanilla extract
  • pinch of salt
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 tbsp dried cherries
  • 1 tbsp slivered almonds

Combine
wheat germ through the nutmeg in a medium bowl.  Stir to thoroughly combine the sugar and extract.  Add in oats, cherries and almonds.  Stir to combine.

To Serve:

Place oatmeal mix in a bowl and add 1 cup of  water, stir to combine.  Microwave on HIGH for 1-2 minutes until desired consistency is reached.

Apple Cinnamon Oatmeal

  • 1/3 c quick oats

  • 1/8 tsp cinnamon

  • 1/2 c dried apple pieces

Combine wheat germ through the nutmeg in a medium bowl.  Stir to thoroughly combine the sugar and extract.  Add in oats,  and apple.  Stir to combine.

To Serve:

Place oatmeal mix in a bowl and add 1 cup of  water, stir to combine.  Microwave on HIGH for 1-2 minutes until desired consistency is reached.


Maple Brown Sugar Oatmeal

  • 1/3 c quick oats

  • 1/2 tsp maple flavoring
  • pinch of salt
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg

BLT Chopped Salad w/Corn, Feta & Avocado

  • 2 c butter lettuce, chopped
  • 2 c fresh arugula, chopped
  • 1 pt grape tomatoes, quartered
  • 4 slices thick-cut bacon, fried and crumbled
  • 1 c sweet corn
  • 1 avocado, chopped
  • 4 oz  feta, crumbled
  • 1 1/2 tbsp olive oil
  • 1 lime, juiced
  • 1/4 tsp salt
  • 1/4 tsp pepper
In a large bowl, combine lettuce, arugula, tomatoes, corn and avocado. Add in salt, pepper, olive oil and lime juice then toss well to coat. Fold in bacon and feta then divide evenly onto 2 plates. 

Chicken Caesar Salad Sandwiches

  • 2 lb boneless skinless chicken breasts or thighs
  • 1/2 to 1 c Caesar dressing
  • 1/2 c Parmesan cheese, shredded 
  • 1/4 c fresh parsley, chopped
  • 1/2 tsp ground pepper
  • Romaine lettuce
  • Slimwich buns
Place chicken in a 3-4 quart slow cooker with 1 1/2 cups of water, cover and cook on low heat for 3-4 hours.

Remove chicken from cooker and drain the water from the slow cooker. Place chicken on a cutting board shred.

Place chicken back in the cooker along with the dressing, Parmesan cheese, parsley, and pepper over the top. Stir until combined. Cover and cook on high heat for 30 minutes or until mixture is hot.

Divide mixture between 4-6 Slimwich buns and top with extra shredded Parmesan cheese and lettuce to serve.

Chicken & Spinach Alfredo Pizza

  • 1 Ball fresh or frozen pizza dough (thawed & room temperature)
  • 2 tbsp butter, softened
  • 1/2 c Parmesan cheese, shredded
  • 3/4 c Alfredo pasta sauce
  • 2 c rotisserie chicken, chopped
  • 1 1/2 c packed fresh spinach leaves
  • 1 c shredded Italian cheese blend or shredded mozzarella cheese

  •  Heat oven to 400°F. Grease large nonstick cookie sheet with olive oil. Press out dough into cookie sheet evenly, and up the sides a bit.
  • Spread butter over dough; sprinkle Parmesan cheese evenly over butter. Bake 7 minutes; remove from oven.
  • Meanwhile, in medium bowl, mix Alfredo sauce and chicken; spoon evenly over partially baked crust. Top with spinach and cheese.
  • Bake 5 to 7 minutes or until cheese is melted and crust is golden brown.

Classic Meat Sauce

  • 2 lb lean ground beef
  • 1 tbsp garlic, minced
  • Salt & Fresh ground black pepper
  • 1/8 c vegetable oil
  • 1/4 c onions, diced
  • 29 oz can tomato puree
  • 24 oz can tomato paste
  • 15 oz can crushed tomatoes
  • 1 tbsp beef base
  • 1 tbsp chicken base
  • 1/2 c grated Parmesan
  • 1 tsp garlic salt
  • 1 tsp freshly ground black pepper
  • 1 tsp dried basil
  • 1 tsp chopped parsley leaves


Brown ground beef with minced garlic and salt and pepper, to taste. Drain ground beef and set aside.

Place oil and onions in a saucepan and saute on high heat until soft. Add all cans of tomato products. Fill the tomato puree can with hot water and dissolve beef and chicken base in this water. Add this water and base mixture to saucepan. Add all other ingredients and heat through. Once hot, add the browned ground beef and simmer on low heat for approximately 1 hour, stirring occasionally.

Serve over your pasta or spaghetti squash.
