Roasted Cauliflower & Tomatoes

  • 1 - Small head of cauliflower florets
  • 2 - Plum tomatoes, chopped
  • 1 1/2c - Olive oil
  • 2 cloves - Garlic
  • 1 1/2 tsp - Cumin seeds
  • 1/4 tsp - Ground tumeric
  • pinch - Ground cayenne
  • 1/2 tsp - Salt
  • 1/2 tsp - Pepper
Toss all ingredients in large bowl until coated. Arrange evenly on a prepared baking sheet. Roast in a 450 degree oven for about 25 minutes. Sprinkle with lemon juice and serve with Indian Rice Noodles.
