Avocado Egg Salad


  • 1 med avocado, pitted and peeled
  • 2 tbsp mayonnaise
  • 1 1/2 tsp lemon juice
  • 4 hard-cooked eggs, peeled and chopped
  • 1 celery stalk, finely chopped
  • 1 tbsp chives, finely chopped
  • 1 tsp curry powder (optional)
  • Salt and black pepper, to taste


Mash avocado, mayonnaise and lemon juice together in a medium bowl. Stir in the eggs, celery
and chives. Season with salt and pepper.

Serve on toast, a wrap or however you like egg salad
